Mexi Casi

What you need:

  • 4 cups crushed Garden of Eatin' blue corn tortilla chips
  • 7 slices Havarti sliced cheese
  • 1 can olives sliced
  • 1 1/2 cups Daisy sour cream 
  • 1 can meijer organics Black Refried Beans
  • 1 can Simple Truth organic Tri-Bean Blend
  • 1 tbs dried cilantro
  • 1 tsp black pepper 
  • 1 tsp cumin
  • 1/2 tsp garlic powder 
  • 1/2 tsp sea salt
  • 1 cup meijer organics traditional pasta sauce 
  • 2 tbs butter 
  • 1 onion diced 
  • 3 cloves of garlic

What to do:

  1. Melt butter in saucepan
  2. Add onion and garlic. Saute until tender
  3. Add cilantro, cumin, garlic powder, pepper, and salt 
  4. Mix well, then add both cans of beans (do not drain)
  5. Add pasta sauce, heat on medium till heated through 
  6. Spray 9 x 13 pan with Extra Virgin Olive Oil
  7. Spread crushed tortilla chips in pan for first layer
  8. Add bean mixture and spread for second layer
  9. Spread sour cream on top for third layer
  10. Place olives on top then place slices of cheese on top layer
  11. Bake for 30 minutes at 350 degrees
